if they offer escrow themselves, it's most likely some built-in plugin or one specific escrow service on the dark web, which most likely just belongs to them.

This is easy to check. Just find some third-party escrow service (preferably on the clearnet) and offer them to make a purchase through it. I'm almost sure that they will find a hundred explanations why they can't make a deal with it.
